In Japan, udon is a very quick casual meal, almost like fast food. Sometimes Chef Naoki makes it at home, creating a broth out of dashi, kombu seaweed and katsuobushi—a dried, fermented, tuna flake, which is smoky and packed with umami. He then adds the noodles and tops with something delicious, perhaps Japanese fried chicken and an egg omelet. He also adds a little bit of chili oil to give it some heat and finishes with a garnish of scallion. It’s a very simple dish, the ultimate comfort food.

Join us every Sunday evening for Sunday Supper, a complete dining experience featuring Tuna Poke Salad, Salmon Sashimi Plate, Chef’s selection of maki and nigiri and finally, Chashu Pork Udon Noodle, a specialty of Chef Naoki.
